Toada is the traditional music of the Parintins Festival - a popular festival (similar to Carnaval) in the Amazon rainforest region. The festival celebrates indigenous rituals and mythologies, as well as the customs of the riverside communities. The Toada songs are often played by groups of over 400 musicians, and the lyrics are dedicated to the forest's beauties and mysteries.
Paraiso is the varietal resulting from the crossing of Yellow Catuai and Timor Hybrid.
The semi-carbonic maceration is a fermentation technique inspired by the winemaking style of Beaujolais wine. The ripe cherries are placed inside a hermetically sealed tank. The carbon dioxide released in the fermentation expels all the oxygen from the tank, creating an anaerobic environment. The maceration is the result of the bottom coffee cherries crushing under the weight of the top cherries.
