El Salvador is the smallest of the Central American coffee countries. Despite that, they grow exceptionally good coffee of high standard. El Salvador is the birthplace of Pacas and Pacamara bean, the latter is a hybrid of Pacas and Maragogype. The famous Pacamaras from El Salvador provides a great body, with tropical fruits, a nice brightness and the characteristic yellow grapefruit aftertaste. 60% of the total coffee harvest is Bourbon, which is characterized by a light and citrusy profile.
95% of the coffee here is grown slowly in the shade. The harvest takes place on a year between December and March and quality is controlled by the farmers' passion and competence, combined with skilled pickers.
