Processing: Long Anaerobic Fermentation
Anaerobic fermentation is a process widely used in wine production and it requires an oxygen-free environment. The coffee fermented within these ideally sealed environments is first pulped, and then fermented for 120 hours. The anaerobic environment slows down the yeast and bacteria activity, which is why it takes so much longer than a more “traditional” aerobic fermentation. This fermentation allows for a new taste profile from the same coffee, albeit higher risks.
This exceptional Natural Process coffee was dry milled and exported by Primrose, PLC. The coffee was grown by smallholder farmers living around the kebele (town) of Gomoro in the Oromia Region.
